Crispy Cheddar Chicken

This looked to good to not post!

2 lbs chicken tenders or 4 large chicken breasts
2 sleeves Ritz crackers
1/4 teaspoons salt
1/8 teaspoon pepper
1/2 cup whole milk
3 cups cheddar cheese, grated
1 teaspoon dried parsley

Sauce:
1 10 ounce can cream of chicken soup
2 tablespoon sour cream
2 tablespoon butter

Crush crackers. If using chicken breasts and not tenders, cut each chicken breast into 3 large pieces. Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the salt and pepper into the cracker crumbs and stir the mixture around to combine. Dip each piece of chicken into the milk and then the cheese. Press the cheese into the chicken with your fingers. Then press the cheesy coated chicken into the cracker crumbs and press it in.

Spray a 9×13 pan with cooking spray and lay the chicken inside the pan. Sprinkle the dried parsley over the chicken. Cover the pan with tin foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10-15 minutes, or until the edges of the chicken are golden brown and crispy.

In a medium sized sauce pan combine the cream of chicken soup, sour cream and butter with a whisk. Stir it over medium high heat until the sauce is nice and hot. Serve over the chicken.

MY BROTHER JOE



Needs prayers. Joe is a avid bicyclist and fitness nut. On March 2, 2013, he fell going down hill at 35 MPH after avoiding a sign. He was with a group of bikers that go out riding all the time. We don't know what caused the fall yet. 

He is in a trauma unit in a CA hospital and has been sedated since he went in. He has multiple breaks and a small skull fracture. His injuries are many so I won't go into detail. 

My brother is a wonderful person who finds the good in everything and everyone. He is always there for everyone and has many, many friends. To know him is to love him. 

He needs prayers to help him get well again. So if you can, just for a minute, find the time to send out a prayer for him I will be forever grateful to you. I know how strong the power of prayer is and that will help him a great deal. Please pray for my brother. ♥

Handmade Crochet Thread White Choker with Beads


This very pretty handmade white crochet thread choker with wooden beads will complete any outfit.

Made with cotton crochet thread, the wooden beads are sewed on and there is a gold circle clasp and gold circle link to close it with. The beads are dark brow, medium brown and light beige.

New in my shop is a set of 10 beautiful handmade crochet shamrocks with magnets on the back of them. Made with worst weight yarn, these cute little dark green shamrocks are 3" tall and 2 1/2" wide and with the magnets glued to the back will stick anywhere you want.

IRISH CUPCAKES

Cupcake Ingredients:
1 cup Guiness
1 stick, plus 1 tbs unsalted butter
3/4 cup unsweetened cocoa
2 cups dark brown sugar
3/4 cup sour cream
2 eggs
1 tbs vanilla extract
2 cups flour
2 1/2 tsp baking soda

Cupcake Directions:
1. Preheat the oven to 350; line a muffin tin with cupcake liners.

2. Combine the Guiness and the butter, chopped into 1-inch chunks, in a large sauce pan, and heat to melt the butter.

3. Remove from heat, and whisk in the cocoa and sugar.

4. In a bowl, whisk the sour cream and the eggs and vanilla, then add to the beer mixture.

5. Sift together the flour and baking soda, and fold in the batter.

6. Pour into muffin molds and bake or 25 minutes, or until inserted cake tester comes out clean. Let stand 10 minutes, remove from muffin tin, and cool completely on a rack.

Frosting Ingredients:
1 stick of unsalted butter, room temperature
3 cups confectioners' sugar
Bailey's Irish Cream
Jameson Irish Whiskey

Frosting Directions:
1. Put the stick of room-temperature butter in a large mixing bowl and bet at medium-too high speed for a few minutes.

2. Add a few short glugs of Bailey's and a tiny bit of Jameson, and mix at low speed.

3. Gradually spoon confectioners' sugar into the bowl, mixing on low speed.
